I grow up with rice. Especially white rice is my comfort food. But after I discovered how good brown rice is for health I decided to switch. I heard from many people that brown rice helped them with their problems like constipation, unstable blood sugar level, high cholesterol, hypertension, over-weight and other health issues. So I studied more and I found out that there are a lot more nutrients in brown rice than in white rice. Protein, fat, of course carbs but good carbs, fiber, and vitamins and minerals that the body needs. But there are some missing parts in it, especially vitamin C and vitamin B12, so adding some vegetable and meat will provide a perfect meal. Another thing to notice is it takes longer time to digest so I started by mixing 1/3 of brown rice with 2/3 of white rice in the beginning and gradually added more brown rice. Now I eat 100% brown rice.
Best way to cook brown rice is rinse first and soak it in the water for about 7-8 hours. When you cook brown rice mixed with white rice, add twice the volume of water to the rice and it will cook fine. But, if you cook 100% brown rice you will have to put some more water. When I cooked brown rice only for the first time, I didn’t like the texture so I added 1/4 cup of water more (total 2 and 1/4 cups of water for 1 cup of brown rice). It actually depends on dryness of the rice, so cook first and see the texture.
In a pot, put washed brown rice and water, let it boil over medium-high heat. When the water is reduced by 1/3 reduce the heat to low, cover lid, and simmer.
Wait until all the water is completely absorbed and taste it. If you think the rice is still too hard to chew you can add more water and simmer in the lowest heat for another 10-15 mins.
I like my rice rather softer than chewy, so I set the covered pot aside off of the heat and let it stand for another 10 minutes.
On this basic method you can add vegetable and meat or seafood as you desire. I will post recipes for more variations later.
Brown rice is my medicine for bowel movement. My problem is completely resolved.
1 cup brown rice
2 plus ¼ cups water
- Rinse brown rise well and put into a pot with water and bring to a boil over medium-high heat.
- Wait till the water is reduced by 1/3. Reduce heat to low.
- Simmer until the water is completely absorbed and set covered pot aside off of the heat for another 10 minutes. Uncover the pot and fluff the rice with a fork.
