Rainbow Chopped Salad

 

Picture1201.jpg-2There are so many foods these days. Sometimes too many choices make us abscond from making a right decision. Everyday’s choices become actions, actions become habits and the habits that you develop each day become who you are. Abraham Lincoln said, “Every person is responsible for his own looks after 40”. Accumulated habits are the energy (either positive or negative) that will occupy your body and mind. Therefore, choosing the right thought and right food every moment is the key to living a healthy life.

Picture1203I used to think eating healthy food is boring. But it actually is fun. Learning about all different kinds of vegetables, fruits, herbs, and some new spices helped me to keep things interesting and absolutely mouth-watering.

Picture1204I especially love to make chopped salads. My eyes are happy to see all different colors of vegetables and fruits whenever I chop them. My cooking style is very simple. I use whatever I have at home. I chop it and in a large mixing bowl, toss everything.

Picture1205And mix with a simple dressing like lime honey dressing. Home made simple dressings keep your meals extra tasty. Good home-made dressings can transform the meal completely! In fact, I would say that creating a variety of dressings, sauces and dips is one of the best ways to stay on path with a healthy lifestyle.

Picture1206You can add some fish, seafood, or some meat if you love it like my husband (He thinks no meal is complete without meat ;)). Or you can add some nuts. Nuts actually have good fat for your body.

If you want to add some cheese try to get ‘raw milk’ organic cheese.

Picture1207This is my rainbow chopped salad that I can eat for lunch and dinner for 10 days in a row.

Rainbow Chopped Salad (for 2-4 servings)

3 cups Romaine lettuce, chopped
10 cherry tomatoes, chopped
1 avocado, chopped
1 orange, chopped
1 cup blueberries
1/2 onion, thinly sliced
1/4 cup raw milk parmesan cheese

Lime Honey Dressing

1/4 cup lime juice
1/4 cup olive oil
2 tablespoons honey
1 teaspoon pink salt

  • Chop or slice vegetables and fruits.
  • Make dressing.
  • In a large mixing bowl toss all the ingredients and mix well.
  • Season with salt and pepper as needed.
