Simple and Delicious : Very Berry Salad

Oh! How I love this season. Beautiful flowers, green trees, and fresh spring breeze… I can enjoy forever. Also this is the season to enjoy a variety of berries..strawberries, blueberries, blackberries, and raspberries. I went to the grocery store the other day and found a beautiful triple pack of berries for $7.99. It was not organic but locally grown, at least. I try to eat organic products as much as I can. Why organic? I read many articles about harmful effects of chemical pesticides not only for our body but also for our environment. We should protect our body and the environment for us and for future generations.

Boston lettuce, also known as Bibb, Butter and Buttercrunch, is rich in vitamins A, B, C and K and is an excellent source of sodium, calcium, potassium and magnesium. When I was suffering from heart palpitations I found that Boston lettuce is one of the recommended food as a natural treatment for heart palpitations and insomnia. No wonder why I like this lettuce so much! Ha~

But mostly, Boston lettuce tastes even better with berries. Believe me and try it!

Rinse the lettuce and dry well. Tear the lettuce leaves with your fingers and place on plates. Add some berries.

Some goat cheese here and there..

Add some nuts, of course.

Drizzle dressing. My dressing is always simple. Olive oil, honey, and balsamic vinegar. That’s it!! Oh, maybe some PINK salt and pepper if you want.

This is the simplest and easiest salad yet the most delicious…very berry much.

The best way of healthy eating is not hard at all!!

Very Berry Salad (serving for 6-8)

1 pint strawberry
1 pint black berry
1 pint blueberry
1 head Boston lettuce
goat cheese
walnuts

Honey Balsamic Vinegar Dressing

1/4 cup olive oil
3-4 tablespoons honey
3-4 tablespoons balsamic vinegar
salt, pepper
