Oh my…I can’t wait to share this salad recipe. I made this salad a couple of days ago and my hubby was complimenting me on every bite. It was just kale, mango, red onion, chopped walnuts and some grated raw parmesan cheese. individually they are not as attractive but together they were a match made in heaven. I could eat this salad for seven days in a low.
Baby Kale Mango Salad
3-5 handfuls baby kale
1/2 red onion, sliced
1 mango, chopped
1/2 cup walnuts, chopped
raw parmesan cheese, shaved
I was so excited to find baby kale at the whole foods market. Regular kale is too tough for me and has a pretty strong grass smell so I always hesitate to use it for salad. But baby kale is softer and has less grass smell. I could nibble all day long even without any dressing on it.
Rinse kale with cold water and dry well in a spinner. Tear them in bite size pieces with your fingers.
I usually make dressing with olive oil but I used grapeseed oil this time.
Lime Basamic Vinegar Dressing
1/4 cup grapeseed oil
1/4 cup lime juice
2-3 tablespoons honey
2 tablespoons balsamic vinegar
salt, pepper
Mix all the ingredients and shake well.
On a plate, put kale, sliced red onion, chopped mango, chopped walnuts, and shave some raw parmesan cheese on top.
Drizzle some dressing over it.
