Rice is one of my comfort foods and I especially have a happy memory about basmati rice. My college friend from India always made it for me and there was nothing like a good, comforting bowl of rice after the long stressful exams. The fragrance and the taste was an absolute lift for my withered soul.
I always love to make rice. The possibilities and flavor combinations are endless. This is my bookmark recipe. Coconut milk, lime, and the fresh chopped cilantro mixed in at the very last impart a fragrance that is definitely reminiscent of my memory and my friend.
Coconut Lime Brown Basmati Rice
1 small onion, chopped
1 tablespoon garlic, minced
2 tablespoons coconut oil
2 cups brown basmati rice
2 cup coconut milk
2 cup water
2 lime zest
1 cup cilantro, chopped

When I saw a ‘Organic Brown Basmati Rice’ at a store, I had to grab it.
Ok. Ready to cook?
Heat the pot over medium heat and add some oil, throw chopped onion and minced garlic. Stir about 2-3 minutes.
Add 2 cups of washed and drained rice, and stir for a few minutes.
Add coconut milk and water.
Add lime zest and pink salt.
Bring it to a boil over medium high heat.
Reduce the heat to low, cover the lid, and cook for 10-15 minutes or until the rice is soft.
Add some chopped cilantro and mix well. Season with salt.
