Well, I’m not a huge fan of desserts but this dessert is an exception. I tried this cake at a ladies brunch the other day and I just fell in love with it right away. The sweetness was just right for me and it was very moist and yummy. The ladies at the brunch complimented a lot so it was just not for me..we all loved it! I got the recipe from my friend, Lea, and wanted to try at home to impress my family but never got a chance. But the time came! I was invited to a ladies luncheon yesterday and I baked it finally. And guess what! It was a hit!! It has been proven so you can bake this banana cake with confidence.
Banana Cake
1 and 1/2 cups banana, mashed
3 cups organic all-purpose flour
1 and 1/2 teaspoons baking soda
1/4 teaspoon pink salt
3/4 cup organic butter, room temperature
2 cups organic pure cane sugar
3 organic pasture raised eggs
2 teaspoons vanilla
1 and 1/2 cup buttermilk
For Cream Cheese Frosting
1/2 cup organic butter, room temperature
8 ounce cream cheese, room temperature
1 teaspoon vanilla
1 cup powdered sugar
First, preheat oven to 300° and grease and flour a 9 x 13 pan.
In a small bowl, mash the banana and set aside.
Mix flour, baking soda and salt in a medium bowl, and set aside.
In the stand mix, mix cream butter and sugar until light and fluffy.
Beat in eggs, one at a time, then stir in vanilla.
Beat in the flour mixture alternately with the buttermilk.
Then add mashed banana.
Pour batter into prepared baking pan and bake in preheated oven for about one hour or until toothpick inserted in center comes out clean.
Let it completely cool.
For the frosting, cream the butter and cream cheese until smooth. Add vanilla and icing sugar, and beat on low-speed until combined, then on high-speed until frosting is smooth.
Spread on cooled cake and sprinkle chopped walnuts over top of the frosting.
This was heavenly. I was extremely pleased with this cake and it gets even better the next day!
