Broccoli Shrimp Rice


As the weather gets colder, I want to eat something warm, something soothing. Rice is one of my year-round soothing foods and adding some vegetables and proteins would make perfect dish for a busy weekday dinner.

Do you know broccoli has twice the vitamin C of an orange, almost as much calcium as whole milk, and contains anti-cancer agent? Like other vegetables, broccoli has a number of nutrition so it is best when eaten raw, because cooking and processing destroys some of its antioxidants. But cold salads are not for winter so I cook with it in my dip, soup, noodle, and rice.

Broccoli Shrimp Rice

2 cups cooked rice (white or brown)
2/1 cup chopped onion
1 cup chopped broccoli
6 jumbo size shrimps
1 tablespoon olive oil
1 cup grated cheese
pink salt and pepper to taste



First, wash well the broccoli and then cut in half.


Chop them roughly and set aside.


I got jumbo size shrimps from Costco but you can use any size of shrimps.


Cut them into bite size but not too small.


Chop onion and throw them in thick layered pan.




Add chopped broccoli.


Then shrimps.


And cooked white rice or brown rice.


Add oil and cover the lid. Cook about 10-15 minutes over medium heat.


Mix well.


Add your favorite cheese.


I can eat this rice everyday! Yum!
