This recipe is also from my Tuesday Bible study fellowship. I thought this recipe would be perfect for Christmas morning or a lazy weekend brunch. At times of the year like this, I need recipes that are simple yet good. Although I enjoy gatherings, I don’t want to spend too much time in my kitchen. If you are like me, this recipe is for you too.
I’m not crazy about bacon, especially when I found out that it has a high amount of AGEs (Advanced Glycation Endproducts) number compared to other foods. But anything in moderation is fine. Adding salad or fruit should help with my feeling of guilt for eating bacon… haha~
Eating well is important, but the body and mind has to be balaced too. I believe good food and a grateful heart make a strong body. Oh yeah…exercise too.
I like fruit salad, but there is no recipe. I usually dig in to my refrigerator and use whatever I find. I chop them or cut them and then cover them with a wrap, and leave them in my refrigerator until we are ready to eat.
Ok. Now the egg casserole recipe from my friend, Teresa.
1 tablespoon olive oil
1 cup chopped onion
1 can (15 oz) sliced white potato
5 organic eggs
1 tablespoon chopped onion powder
1 teaspoon garlic powder
1 teaspoon dried thyme or parsely (whatever you like)
1/2 cup shredded sharp cheddar
chopped green onions for garnish
pink salt, pepper
What I liked about this recipe was using the potato can. I never used it before; in fact, I didn’t even know there was a such thing. But, it saved me a lot of time for preperation. I was so happy that I sang~~!! Lol
First, fry bacons in a frying pan, transfer them to a paper towel to drain the excess oil, and cut them into bite-size pieces. Set aside.
After frying the bacon, discard the oil. In the same pan, add olive oil, and cook chopped onion for about 3-4 mins.
Add drained canned potatoes.
While cooking the potatoes, in another frying pan, add some oil, and cook eggs .
Season with salt.
Combine the eggs with the potato mixture.
Add some your favorite stuff.
And then cheese..
Stir well..season with salt and pepper.
Put them and the cooked bacon on the dish.
Garnish with chopped green onions.
Time to dig in!
It can be served with morning buns or croissants if you want to gain weight! Haha~
