Middle Eastern Chickpea Salad

MIDDLE EASTERN CHICKPEA SALAD (inspired by Ina Garten)

Ingredients

  • 4 perisian cucumbers, diced
  • 3 vine-riped tomatoes, seeded, cored, and diced
  • 1 can garbanzo beans(15oz), rinsed and drained
  • 1/3 cup red onion, chopped
  • 1 tablespoon garlic, minced
  • 1/3 cups fresh flat-leaf parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1 tablespoon lemon juice, from 1 lemon
  • 1/3 cup extra virgin olive oil
  • 1/3 cup feta cheese
  • Pink salt and freshly ground black pepper to taste
