Beef Burrito & Easy Burrito Bowl




  • 4 plum tomatoes, diced small
  • 1/2 medium size yellow onion, diced small
  • 1 jalapeño pepper, seeded and minced
  • 1 tablespoon lime juice
  • 2 tablespoons fresh chopped cilantro
  • Pink salt and pepper to taste
  • 2 ripe avocados, peeled, pitted, and mashed
  • 1 tablespoon lime juice
  • Pink salt to taste
  • 1 tablespoon canola oil
  • 1/2 medium size yellow onion, finely diced
  • 1 lb ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Pink salt and pepper to taste
  • 6 10″- flour tortillas
  • 1 1/2 cups cilantro lime rice (click for the recipe)
  • 1 can (15 ounce) low sodium black beans, rinsed and drained
  • 1/2 cup sour cream, whipped
  • 6 oz Mexican blend four cheese


  1. In a small bowl, combine the tomatoes, yellow onion, jalapeño, cilantro, and salt. Drizzle the lime juice and mix
  2. In a medium bowl, mash together the avocados, lime juice, and salt.
  3. Heat oil in a skillet over medium high, add chopped onion and salt; cook for about 4-5 minutes or until translucent.
  4. Add ground beef, garlic powder, coriander powder, cumin powder, smoked paprika, and cayenne pepper; cook thoroughly and season with salt and pepper.
  5. Wrap tortillas with a damp paper towel and warm in the microwave for about 20-30 seconds.
  6. Place tortilla on a flat surface, evenly distribute the rice, then topped with beef, beans, the pico de gallo, sour cream, and cheese.
  7. Wrap the tortilla burrito style : fold the flap on both sides of tortilla first, toward center. Starting from your body and moving outward, roll the burrito forward, keeping it tight to form a log (watch video).

  • To a bowl, add a large spoonful of cilantro rice, black bean, pico de gallo, chopped Romaine lettuce, and cheese. Top with cream and serve immediately.
  • Optional Filling Ingredients: Beef, Chicken, Guacamole, Green Chilies, Corn, ect.
