PUMPKIN BREAD (Gluten Free)
Ingredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 1 teaspoon pumpkin spice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon pink salt
- 3 pasture raised eggs
- 3/4 cup pumpkin puree
- 1/4 cup raw honey
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1/2 cup nuts, chopped
Instructions
- Preheat oven to 325F and grease 9×4″ loaf pan.
- Combine almond flour, coconut flour, pumpkin spice, cinnamon, baking soda, and pin salt in a mixing bowl.
- In another bowl, combine eggs, pumpkin puree, raw honey, melted butter, and vanilla extract; mix well.
- Pour wet mixture to dry mixture and mix until just combined.
- Spread the batter into the prepared loaf pan, sprinkle the chopped nuts on top and bake for about 50-60 minutes, or until a toothpick comes out clean.
- Transfer to a wire rack to cool.
