Non Spicy CUCUMBER KIMCHI

Ingredients

10 Persian cucumbers

2 tbsp coarse sea salt

2 small red bell peppers

1 garlic cloves

2-3 tsp fish sauce(red boat)

1 small sweet onion, sliced

5 g Chinese chives,

Directions

Cut cucumber in half and cut each piece into quarters.

Place them in a bowl, add salt, and mix until coated.

Let cucumbers stand at room temperature about 20 minutes; drain. (Do NOT rinse)

Combine red bell peppers, garlic, and fish sauce in a food processor: puree them until smooth.

In a large bowl combine cucumbers with onion and chives, add red bell pepper sauce and mix well.

Transfer cucumber mixture into an air tight container and refrigerate until chilled and flavors have blended.
